ALMOND FLOUR CHOCOLATE MUG CAKE

Rich gluten free chocolate cake that’s good for you and bakes in 60 seconds!

There’s a curious phenomenon I’ve noticed. The mood for cake always strikes me whenever there’s a lack of cake in the house. Perhaps you’ve experienced this, too. If so, today’s recipe is here to save the day: Almond Flour Chocolate Mug Cake! 


WHY YOU SHOULD MAKE THIS MUG CAKE:


-Super easy even when you’re not in a baking mood

-Only requires a few ingredients

-Gluten and dairy free (if desired)

-Contains a healthy dose of protein, so you can have it as a meal!

-It’s an individual serving, so you can eat the whole thing and not feel bad about not sharing🙂

-60 sec to bake…need I say more???



While this is technically a mug cake, the ingredients are wholesome enough to count as healthy. The protein, fiber, and healthy fat in the almond flour makes a small portion filling and satisfying. This can be a quick breakfast topped with almond butter and Greek yogurt or an easy, next-to-no-effort dessert with a little scoop of ice cream for when you've had a long day and need chocolate.


HOW TO MAKE THIS MUG CAKE:


Whisk together dry ingredients: almond flour, cocoa powder, baking powder, sugar, and flaxseed. Add in wet ingredients: vanilla, almond milk, and applesauce. Microwave for a minute.  Top with nut butter, yogurt, or fruit …or whipped cream, frosting, or powdered sugar…you pick. That’s it!


I’ll admit, it’s a little dangerous that cake is this easy to make, but hey! Seconds? Don’t mind if I do!

ALMOND FLOUR CHOCOLATE MUG CAKE (GF, V, DF, SD)

Serves: 1


What You'll Need:


  • 2 tablespoons almond flour

  • 2 tablespoons cocoa powder

  • ¼ teaspoon baking powder

  • 1 tablespoon coconut sugar, or other granulated sugar

  • ½ tablespoon ground flaxseed

  • ½ teaspoon pure vanilla extract

  • 1 tablespoon almond milk, or milk of preference1 tablespoon unsweetened applesauce (can sub with nut butter for additional protein and nutrients)

  • 1-2 tablespoons add-ins, optional (e.g.: chocolate chips, shredded coconuts, dried fruit, chopped nuts, etc.)


How To Make it


1. In a small bowl, whisk together almond flour, cocoa powder, and baking powder until no lumps remain.

2. Whisk in the remaining ingredients until the batter is smooth.

3. Transfer the batter into a mug or individual serving size ramekin dish. Make sure to gently tap the dish to even out the contents. Microwave for 45-60 seconds; if your container isn’t very tall, microwave in increments so that the batter doesn’t overflow. Microwaving in increments is recommended to avoid burning the mug cake. The cake should look set, and the top of it should no longer be wet. Serve with desired toppings.
