Quick and easy 6 ingredient vegan fudge that tastes like an almond joy bar…need I say more?

Today is none other than the holiday made famous by Leslie Knope, courtesy of Parks and Rec: GALENTINE’S DAY! It’s also Mardi Gras! Which can only mean one thing: it’s time to partayyy! And throughout the month of February, I’m pretty sure it’s mandatory for every gathering to include alllll the chocolate, be it brownies, truffles, cake, cookies, or this recipe: easy vegan almond joy fudge.
This isn’t the type of fudge you have stir non-stop while you fret over trying to read that candy thermometer you found in the bottom of your drawer that you’re only 41% sure is still working. (not a personal story) This is quick fudge, thanks to the use of condensed coconut milk, which also contributes to the throw-back flavor of those almond joy bars from childhood past. It comes together as quickly as you can melt chocolate chips!
This fudge is made with only 6 ingredients: semi-sweet chocolate chips, sweetened condensed coconut milk, almond butter, almond extract, shredded coconut, and roasted almonds, but they come together to make a treat that’s rom-com movie level(which means great, if you’re not into rom-coms….but seriously, who couldn’t go for the classic Meg Ryan-Tom Hanks duo this time of year?!)
These are relatively customizable, although changing the add-ins will change the flavor. If you’re not a coconut/almond fan, though, have some fun with mixing it up! You could go for a Reese's vibe and use peanut butter in place of almond butter, and peanuts as opposed to almonds, etc. Whatever floats your boat! Tastes best eaten chilled and while watching anything sappy. XOXO
EASY VEGAN ALMOND JOY FUDGE (V, GF, DF)
Yield: 1 6-inch round pan
What You'll Need:
1 cup semisweet or bittersweet chocolate chips (regular or vegan, according to preference)
¼ cup creamy, salted almond butter
1 (7.4 oz) can sweetened condensed coconut milk
½ teaspoon pure almond extract
¾ cup unsweetened shredded coconut
⅓ cup chopped roasted almond (you can use whole or slivered almonds; whole will be more crunchy)
How To Make it
1. Over medium-low heat, melt together chocolate chips, almond butter, sweetened condensed coconut milk, and almond extract. Stir frequently to prevent burning.
2. Once chocolate is melted and mixture is smooth, remove from heat, and stir in shredded coconut and chopped almonds.
3. Pour into a lightly greased 6-inch pan. (Pan can be larger, but fudge will be a thinner layer) Refrigerate until the fudge is totally firm, then cut into squares.
